Fun fact, I used to hate salad. Yes, hate is a strong wrong and yes, I used it accurately to describe my distaste for salad. But, I would order a small side salad when I would go out to eat and I would try to take as many bites as I could stomach and many years later, salads are one of my favorite things to eat.

This next salad is my favorite surprise, because if you had told me one of my all-time favorite salads would have a Kale base, I would have laughed in your face and told you, you were insane. But this is my FAVORITE salad. Lindsay over at Pinch of Yum hit it out of the ballpark with this Pomegranate, Kale, and Wild Rice Salad with Walnuts and Feta. Once I tried it, I was hooked.
